Tonight, with nothing really in mind for dinner and chicken defrosting, I went online to make a chicken dish of some sort. It was 2:30 pm, so I had to act fast. In looking at several recipes, I made a recipe of my own for tonight's "Lemon Chicken." It actually went over great, we all liked it, and ate it up fast! So this is a keeper, and it is so easy!
Lemon Chicken for the crock pot
Serves 6
Ingredients:
3-4 large skinless boneless chicken breasts
¾ cup flour
Olive oil for browning
1 Tbs. salt
6 Tbs. ketchup
6 Tbs. brown sugar
2 Tbs. balsamic vinegar
1 cup lemon juice
4 Tbs. cornstarch
¾ cup water
Cut chicken into long strips or cut each breast in half. In a bowl, combine flour and salt, and dredge the chicken into the flour mixture. In a hot skillet, add the oil, and brown the chicken. Place the chicken in crock pot. In a separate bowl, mix ketchup, sugar, vinegar, and lemon juice with a whisk, and pour on top of chicken. Cook on low for 6-8 hours, or on high for 3 ½-4 hours. Once cooked, remove chicken, and to the remaining sauce add the water, and the cornstarch and stir until combined. This will make extra lemon sauce.
Serving suggestion: Serve chicken on top of rice, adding extra sauce to your plate if you like.
